Ingredients

For the Meatball Mixture:
- 1lb of gRound Beef, I used an 85-15 mix
- 2 Cloves of Garlic, finely minced
- 1/4 cup of Parsley, finely minced
- 2 tsp of Garlic and Herb Seasoning
- Zest of 1/2 Lemon
- 1 Egg
- 1/4 cup of Breadcrumbs
- Touch of Salt to taste
- 2 Tbsp of Olive Oil
- 1 Tbsp of Butter
- 1/2 cup of Flour
- Juice of 1/2 Lemon (or whole lemon if you want it really lemony)
- 1 1/4 cup of Chicken stock
- 1 Clove of Garlic, smashed, peeled and cut in half
- Chopped Parsley
Preparation

1) In a bowl, mix all the ingredients for the meatballs, form into small golf size balls ( I prefer them small for this) then roll them in the flour and set them aside for a few minutes.
2) In a non stick skillet (I used my 10" for this) add the oil and butter, bring to temperature over medium heat, then in batches, sear the meatballs on all sides, remove any excess fat, then add all the seared meatballs in, along with a clove of garlic, cook that for one minute then add the stock and lemon juice, partially cover and simmer for about 20 minutes or until the meatballs are tender and the sauce has thickened, finish with some parsley and serve.
